CREAMY WHITING CHOWDER


  • INGREDIENTS (SERVES 4-6):

    450g (1lb) Whiting Fillets, Skinned & Cubed
    225g (8oz) Potatoes, Peeled & Cut Into Chunks
    125g (4oz) Sliced Green Beans
    50g (2oz) Peeled Prawns
    1 Small Onion, Peeled & Thinly Sliced
    420 ml (3/4 Pint) Milk
    1 x 400 ml (14 fl oz) Can Creamed Sweetcorn
    Salt, Pepper and 2 Bay Leaves to Season to Taste
    Chopped Parsley to Garnish

  1. Place the potatoes, onion, milk & seasoning in a saucepan and
    simmer gently until the potatoes are cooked (approx 10-15 minutes).

  2. Add the cubed whiting, sliced green beans, peeled prawns , creamed
    sweetcorn simmer for a futher 10-15 minutes.

  3. Remove the bay leaves and serve sprinkled with a little chopped parsley
    and a warm crusty bread roll.


HEALTHY HINTS:
Use skimmed milk instead of half fat or whole milk!
