FRESH
FISH:
The waters surrounding the coastline of
Devon and Cornwall contain some of the finest fishing
grounds around the UK producing an unsurpassed variety
and quality of fish, a wonderful natural resource that
must be husbanded for generations to come. For a
taste of the West why not try:
Bass: the connoissuer's choice.
Much sought after, this prime fish has soft textured
white flesh with a distinctive delicate flavour.
Delicious when stuffed and baked whole!
Brill: one of the top four locally caught
fish. This flat fish has a firmer texture than
Plaice and delicious flavour similar to that of Sole.
Greenland Halibut: also known as black halibut.
Boneless as fillets, this fish has moist soft white flesh
with a mild creamy flavour. Perfect for those who do not
like too strong a flavour and ideal for children!
Gurnard: probably the most colourful fish
caught off our coastline. The flesh is firm and
pink with chunky meaty flakes and a sweet nutty taste.
Try grilling with a little olive oil and cajun spices!
John Dory: a culinary delight awaits those
who are not deterred by the unusual appearance of this
prickly spined fish. Best cooked as fillets, John Dory
lends itself particularly well to a light dusting of
seasoned flour and shallow frying for 2-4 minutes each
side in olive oil.
Lemon Sole: Lemon Soles caught locally are
reputed to be the finest in the UK! The flesh has a
soft white texture and lovely delicate flavour.
Mackerel: the irridescent silver blues of
the mackerel and the health benefits found in its special
oils have ensured the mackerel's continued popularity.
Why not try some of our own smoked mackerel fillets -
probably the best in the west!
Plaice: This flat fish is easily
recognisable from its bright red spots. Breaded plaice
fillets have proven to be a firm favourite with all
generations!
Red Mullet: the goldfish of the sea!
The flesh is a pale pink with a flaky texture and nutty
flavour similar to that of Gurnard.
Turbot: the majestic Turbot is the king of
the locally caught flat fish. Its flaky, firm white
flesh has a delicious creamy flavour.
SMOKED FISH:
For over 75
years at Jacksons we have proudly produced our own smoked
fish specialities and other delicacies.
Smoking is a natural method of preserving fish and smoked
fish should look fresh and glossy and have a pleasant
smoky smell.
We
also smoke fish for others - you catch it, we'll smoke it!
Sample
our finest smoked salmon. We take prime
quality Scottish salmon and freshly smoke it
daily over oak chips for a fuller flavour before
slicing it by hand in the traditional method.
You can see the quality, now taste the difference!
Kiln
roasted salmon is one of our favourite delicacies.
Mouth wateringly good, it is cooked and ready to
eat and sure to impress! Why not try our new
honey & whisky glazed variety!
Our
smoked chicken breasts are marinated with juniper
berries and tarragon and then hot smoked over oak
chips until golden brown and are a succulent and
tasty treat which is ready to eat.
Delicious served thinly sliced as a starter or in
salads, or whole as a main course!
Not
forgetting our traditional smoked mackerel
fillets, the humble kipper or for something
different, tantalise your tastebuds with our
smoked prawns!
