BAKED MARINATED FISH FILLETS


  • INGREDIENTS (SERVES 2):

    The following recipe can be made with equal success with 2 generous portion
    size fillets of any of the following: gurnard, red mullet, red snapper or red fish

    To make the marinade:
    Tablespoon virgin olive oil
    Dessertspoon balsamic vinegar
    Tablespoon white wine vinegar
    Good squeeze of lemon juice (or try you own variation by using lime or orange juice instead)
    Cajun spices

  1. Put all the ingredients (except Cajun spices) in a large ovenproof dish and mix well.
  2. Rinse the fish fillets and pat dry on kitchen roll.
  3. Roll them in the marinade to coat them well.
  4. Leave the fillets in the dish and sprinkle the tops with the Cajun spices.
  5. Cover with cling film and leave in the fridge for 30 minutes before cooking.
  6. Preheat your oven to a medium/hot heat then uncover the dish and strain off the excess marinade.
  7. Bake for 20 - 25 minutes or until cooked.

    Delicious served with savoury rice and vegetables of your choice.
