QUICK PAELLA


  • INGREDIENTS (SERVES 4):

    200g (7oz) Mixed Shellfish (Prawns, Mussels, Cockles, etc.)
    1 Tablespoon Olive Oil
    1 Chopped Onion
    1 Crushed Garlic Clove
    1/2 Chopped Red Pepper
    1/2 Chopped Green Pepper
    1 x 200g (7oz) Pack Corriander & Herb Flavoured Rice
    250ml (9fl oz) White Wine
    500ml (18fl oz) Water
    Salt & Pepper to Taste
    Chopped Corriander to Garnish

  1. Heat the oil in large frying pan. Add the onion, garlic, peppers and rice.
    Cook for 1 minute.
  2. Add the water and wine. Cover and cook for 7 minutes.
  3. Add the shellfish and cook for a futher 3 minutes, or until the liquid
    has been absorbed.
  4. Serve immediately, garnished with the chopped corriander.

HEALTHY HINTS:
Substitute the white wine with fish, chicken or vegetable stock if preferred!
