FRIED SCALLOPS WITH BASIL & LIME BUTTER


  • INGREDIENTS (SERVES 3):

    9 King Scallops, Cleaned
    85g (3oz) Softened Butter
    2 Tablespoons Chopped Basil
    Rind & Juice of 1 Lemon
    Salt & Pepper to Taste

  1. Mix together the butter, chopped basil, lemon juice and rind and seasoning.
  2. Remove the coral (or roe) from each scallop and set aside. Half each scallop.
  3. Melt half the butter in a frying pan. Add the scallops and cook for 3-4 minutes.
    Add the coral and cook for a further minute.
  4. Add the remaining butter and serve with crusty bread as a starter.

HEALTHY HINTS:
Use a low fat spread suitable for shallow frying instead of butter!
