- Mix together the
butter, chopped basil, lemon juice and rind and
seasoning.
- Remove the coral (or
roe) from each scallop and set aside. Half each
scallop.
- Melt half the butter
in a frying pan. Add the scallops and cook for 3-4
minutes.
Add the coral and cook for a further minute.
- Add the remaining butter and
serve with crusty bread as a starter.
