SMOKED HADDOCK SCRAMBLE


  • INGREDIENTS (SERVES 2):

    225g (8oz) Smoked Haddock, Skinned & Cubed
    25g (1oz) Butter
    2 - 4 Tablespoons Milk
    2 Eggs
    Salt & Pepper to Taste

  1. Melt the butter in a saucepan, add the cubed smoked haddock
    and seasoning. Cook for 2 minutes.

  2. Beat the eggs and milk together. Pour over the fish.

  3. Cook stirring until the eggs are light and fluffy.

  4. Serve with toast.


HEALTHY HINTS:
Substitute the butter and milk for low fat versions!
