SKATE WITH GARLIC & HERB BUTTER


  • INGREDIENTS (SERVES 2):
    375g (12oz) Skate Wings
    50g (2oz) Garlic & Herb Butter
    280ml (1/2 Pint) Boiling Water
    2 Tablespoons Lemon Juice
    1 Tablespoon Chopped Parsley
    Salt and Pepper to Taste

  1. Poach the skate wings in a large shallow pan with the boiling water
    until cooked (approx. 10 minutes).

  2. Remove the skate wings and keep warm, discard the water.

  3. Melt the butter in a pan, add the parsley, lemon juice and seasoning.

  4. Cook until sizzling and golden brown.

  5. Pour the butter over the skate and serve.


HEALTHY HINTS:
Substitute the butter for a low fat spread suitable for cooking!
