SOLE VERONIQUE


  • INGREDIENTS (SERVES 4):

    4 x 175g (6oz) Lemon Sole Fillets, Skinned
    2 Tablespoons White Wine
    2 Tablespoons Fish or Chicken Stock
    1 Tablespoon Lemon Juince
    2 Egg Yolks
    5 Tablespoons Cream
    50g (2oz) Seedless Grapes, Halved
    Salt & Pepper to Taste

  1. Roll the fish fillets, skinned side up and place in a shallow dish in a single layer.
  2. Mix the wine, stock and lemon juice and pour over the fish.
    Cover and microwave on high for 5 minutes.
  3. Remove the fillets, cover and keep warm. Keep the liquid.
  4. Beat the egg yolks and cream together in a small bowl.
    Whisk in the reserved liquid.
  5. Add the grapes and cover. Microwave on high for 1 minute, stir,
    microwave for a futher minute.
  6. Season the sauce, pour over the fillets and serve with fresh vegetables.

HEALTHY HINTS:
Substitute the cream for a low fat version!
If you do not want to use wine, use more stock instead!
