SWORDFISH IN LEMON &
TARRAGON BUTTER

- Melt the butter in a
large pan. Add the lemon rind and half the lemon
juice.
- Add the swordfish
steaks and cook for 3 minutes on each side.
Remove the steaks and keep warm.
- Add the remaining
lemon juice and tarragon. Add salt and pepper to
taste.
- Heat until sizzling
and pour over the steaks.
- Serve with potatoes
and mixed salad.
