SWORDFISH IN LEMON & TARRAGON BUTTER


  • INGREDIENTS (SERVES 2):

    2 x 175g (6oz) Swordfish Steaks
    25g (1oz) Softenend Butter
    Grated Rind of Half a Lemon
    2 Dessertspoons Lemon Juice
    1 Tablespoon Chopped Tarragon
    Salt & Pepper to Taste

  1. Melt the butter in a large pan. Add the lemon rind and half the lemon juice.
  2. Add the swordfish steaks and cook for 3 minutes on each side.
    Remove the steaks and keep warm.
  3. Add the remaining lemon juice and tarragon. Add salt and pepper to taste.
  4. Heat until sizzling and pour over the steaks.
  5. Serve with potatoes and mixed salad.
