TASTY TATIES


  • INGREDIENTS (SERVES 2):

    225g (8oz) Hot Smoked Mackerel
    2 x 225g (8oz) Baked Potatoes
    1 Tablespoon Horseradish Sauce
    2 Knobs of Butter
    Salt & Pepper to Taste
    25g (1oz) Grated Cheese

  1. Remove the skin from the mackerel and flake the flesh into a bowl.
    Discard any bones. Add the horseradish sauce and seasoning.

  2. Open the baked potatoes and add a knob of butter to each.

  3. Fill with the fish mixture. Top with the grated cheese.

  4. Grill under a medium heat until the cheese has melted and
    the mackerel is hot.

  5. Serve with a side salad.


HEALTHY HINTS:
Substitute the cheese and butter for low fat versions!
