Maison Perard – Sea Urchin

Sea urchin is one of the world’s delicacies and for any lover of fresh seafood, the taste is just sublime!

Corail d’oursin (sea urchin roe) smells of the sea, tastes of the sea and is an exceptional gastronomic pleasure – and though different, tastes as good as caviar.

If you want a one off gastronomic delight, sea urchin roe is best served very cool on a teaspoon (with a few optional drops of fresh lemon or lime juice). You could also use some mini blinis, add a little sour cream, and then some sea urchin roe, as for caviar!

Serve sea urchin roe as part of a sushi platter.

Other creative ways to enjoy sea urchin roe are to combine it with butter to make sea urchin butter, or you can use it to flavour sauces such as beurre blanc.
